So on Friday night I felt like getting a little crafty with my cooking and decided to make homemade ravioli. Like... from scratch. What seemed like a daunting task actually turned out to be fairly easy and totally yummy. I started out with the basics.. flour, eggs, water, and then made the dough. Just as I was getting ready to roll it out.. I realized I was lacking a rolling pin. (Totally should have included this in my registry four years ago when I was running around Bed Bath and Beyond like a kid in a candy store). Anywho, I decided to substitute with... a wine bottle! Sounds crazy, but it actually worked.
After rolling out the dough, I made my squares with a pizza cutter and spooned some filling in each one. Here is the filling (ricotta and fresh spinach):
Here are the stuffed raviolis pre-cooked:
I put them in boiling water until they all were floating, added sauce, and here is the final product:
The critics (Rob and my dad) gave their seal of approval!
